Ingredients:
- 2 egg yolks
- 180 ml yakult
- 150 ml cream
- 50 ml full cream milk
- 75 g castor sugar
- 5 g vanilla sugar
- Beat the egg yolks, castor sugar and vanilla sugar untill the mixture is light and frothy.
- Add the milk and yakult stirring constantly.
- Whip the cream until it is almost stiff.
- Combine the wihipped cream with the mixture, make sure that all ingredients are thoroughly mixed.
- Place in the refrigerator for at least 4 hours.
- Transfer the complete mixture into an ice-cream maker and follow the menufacurer's instructions. (preparation time: 40-50 minutes)

hi! i'm interested in making your yakult ice cream. i couldn't find any vanilla sugar. can i use vanilla extract instead? if yes, how much should i put? thanks!
Casey, you can make your own vanilla sugar. Split a vanilla pod. Scrape the seeds and mix them into an air-tight container filled with at most 2 cups of sugar. Bury the bean into the sugar too and close the container. Let it sit for at least a week and you're done. :)
If you're using NATURAL vanilla extract (Not the flavoring!), thoroughly mix a teaspoon of it into a cup of sugar.
how important is the vanilla sugar though? I've just made it, and I found the vanilla could be quite overpowering and not bring out the yakult flavour....
